Q: What makes your breads and treats Paleo?
A: Everything I make is gluten-free, grain-free, dairy-free, and soy-free which are the tenants of the Paleo diet.
Q: What is Paleo anyway?
A: The Paleo diet is what our Paleolithic hunter-gatherer ancestors ate before the agriculture era, such as lean meat, vegetables, fruit, nuts, seeds, and berries. There is an abundance of information about the Paleo diet. Go to Mark’s Daily Apple and The Paleo Diet to find the most up to date and complete information.
Q: Where can I find a list of what you make?
A: This page lists everything I will make, but they will not all be available at any one time. I will be making 3-4 items per week for sale at the local farmers markets.
Q: Where can I find a list of ingredients in your breads and treats?
A: This page on my website has the name of each item I make and the ingredients listed in order of weight along with any common allergens.
Q: Can I place special orders?
A: Yes, you can use our order form. Please note the minimum order amount.
Q: What commercial kitchen do you use?
A: None, I am operating under the new cottage law which allows me to make my items in my home kitchen. You can read about Oregon’s Home Baking Bill here.
Q: What kind of inspections do you undergo?
A: Under the cottage law, my kitchen is not inspected routinely, but could be at any time.
Q: How do I know you follow the guidelines and cleanliness of a commercial kitchen?
A: Here are some things I have done to insure kitchen cleanliness:
- I had a wall built to close the kitchen off so any guests could not inadvertently bring gluten or other allergens into the kitchen.
- I made my husband take and pass the food handlers certification before he could come into the kitchen.
- I follow all cleaning guidelines found in the Oregon Department of Agriculture Domestic Kitchen Licensing Requirements.
